Oven-Barbecued Lamb Riblets

Instructions

Place riblets close together in your favorite French dressing or in a thin barbecue sauce to cover; allow to stand in the sauce in the refrigerator several hours or overnight. To cook: Place on broiler pan about 2 to 3 inches below hear source in broiler over. Cook on one side riblets to desired doneness, about 5 minutes. Turn, brush with dressing or sauce, cook about 4 minutes more. Remove from oven, brush tops liberally with warmed honey, sprinkle very lightly with powdered thyme. Slip pan back under broiler for the riblets to finish browning and to glaze. At the end of the broiling time (10 to 12 minutes), the riblets should be well browned and crispy-sided. Serve very hot.
