Cantaloupe Salsa

Ingredients

  • 1/2 largeCantalouperipe
  • 3/4 cupRed Bell Pepperfinely diced
  • 1/4 cupCilantrofinely chopped
  • 3 tbspnsScallionsfinely chopped
  • Juice Of Lime
  • pinchHot Pepper Flakes
  • pinchSalt

Instructions

Remove seeds and rind from cantaloupe. Chop cantaloupe into very small dice. Put in bowl. Add diced red pepper, cilantro, scallions and lime juice. Stir. Add pinch of salt and pepper flakes. Chill. Serve with grilled chicken, fish or steaks. Makes 4 servings.
