Instructions
Combine 1 cup blueberries (reserve the other cup on the side), 1/4 cup white sugar, 1/2 cup water, and 1 tsp vanilla extract in small saucepan. Heat on medium high until boiling, blueberries should start to fall apart. In another small bowl, combine 1 tbsp cornstarch with 1 1/2 tbsp's water until the cornstarch dissolves. Then add to the blueberry mixture on the stove. Bring to a rolling boil, then turn heat down to low. Allow to simmer for 2-3 minutes or until desired consistency. If too thick, add water 1 tbsp at a time until desired consistency. Remove from heat and stir in your remaining cup of blueberries. Allow mixture to heat additional blueberries. Can be served warm or cold.
