Carbonara - Style Fettuccine

Ingredients

  • 6 oz.Fettuccine Pastaplain
  • 6 oz.Fettuccine Pastaspinach
  • 1 largeSweet Red Pepperhalve, core, seed and chop
  • 2 wholeEggs
  • 1/4 cupSour Creamno-fat
  • 1/4 cupParmesan Cheesegrated
  • 1/2 tspn.Salt
  • 1/4 tspnBlack Pepperground
  • 3 oz.Canadian Baconsliced, cut 1/4-in wide strips
  • 1/2 cupParsleychopped

Instructions

1. Cook fettuccine according to pkg directions in boiling salted water. About 5 minutes before fettuccine is cooked, gradually add sweet red pepper to boiling water. 2. Meanwhile, whisk together eggs, sour cream, Parmesan cheese, salt and pepper in medium-size bowl. 3. Drain pasta; return to saucepan. Immediately pour egg mixture over pasta. Add bacon and parsley; toss together until fettuccine is well coated with sauce. Serve.
