Basic Pastry - Cuisinart

Ingredients

  • 2 2/3 cupsFlour
  • 2 sticksButtervery cold, unsalted
  • 1 tspSalt(Or 1/2 tsp with salted butter)
  • 1/2 cupIce Water

Instructions

Use metal blade in Cuisinart food processor to process flour, butter (cut into 1 inch pieces first) and salt until mixture is like a coarse meal, about 8 seconds. Add ice water and pulse until dough begins to clump together. Do not let it form a ball. Divide dough and any little scraps into three equal parts and put each in a plastic bag. Work through bag to press dough together into a ball, then a flat disc. Refrigerate dough at least 1 hour. Roll each disc of dough on lightly floured surface to a circle about 1/8 inch thick. Press into place in pie pan, and follow the pie's recipe to finish. Makes three pie doughs. Can be frozen.
