Moroccan Spiced Chicken

Ingredients

  • 1 cupApricot and Cardamom ChutneyCardamom Hills Trading Co.
  • 1 tbspOlive oil
  • 1 tbspApple Cider Vinegar
  • 1/2-1 tbspchili powderor to taste
  • 1 clovegarlicpeeled & crushed
  • 2 lbs.chicken thighsboneless, skinless
  • salt & pepper
  • 2 tbspbutter
  • 1/4 cuphoney
  • 1/8 tspcardamomground

Instructions

Combine marinade ingredients. Place chicken thighs and marinade in bowl. Marinate for several hours up to overnight in the fridge. Preheat oven to 400 degrees F. For the basting butter, melt the butter, stir in the honey and ground cardamom. Bake thighs for 30-35 minutes on foil lined cookie sheet, basting occasionally with the butter. Test for doneness-cooking time depends on thickness of the thigh meat. Serve with couscous.
