Almond creme with raspberries

Ingredients

  • 1 packageUnflavored Gelatin
  • 2 cupsWhipping Cream
  • 1/3 cupHoney
  • 2 tspnAlmond Extract
  • 1 cupfrozen,thawed,
  • Raspberrieslightly sweetened
  • 1/4 cupSugar
  • 2 tspnCornstarch

Instructions

Soften gelatin in 1/4 cup cold water. Add 3/4 cup boiling water; stir until dissolved. Stir in cream, honey, and extract. Pour into 6 dessert dishes. Chill for 3 to 4 hours or until firm. Thaw berries, reserving liquid. Add enough water to liquid to measure 1/2 cup. Combine sugar and cornstarch; stir in 1/2 cup liquid and half the berries. Cook and stir until bubbly; cook 2 minutes more. Stir in remaining berries. Cover; chill. Spoon berries over creme to serve. Serves 6.
