Sift flour with 3/4 cup sugar and salt 4 times. Beat egg white with cream of tartar until soft peaks form. Add remaining sugar, 2 tablespoons at a time; beat well after each addition. Sift 1/4 cup flour mixture over egg whites; fold in carefully. Fold in remaining flour mixture by fourths. Turn into 10 inch tube pan. Bake in preheated 375 degree oven 35 to 40 minutes or until cake tests done. Invert pan on funnel; cool completely. Remove from pan. Yield 10 to 12 servings. CHECK Angel Almond Layer
