Gazpacho
Ingredients
- 1/2Cucumber
- 1/2Mld Red Or White Onionpeeled
- 1/2Avocado
- 1/2 tspnOreganocrumbled
- 3 tblspnsOlive Oil
- 2 tblspnsWhite Wine Vinegar
- 4 cupsTomato Juicecanned
- 2Limescut in wedges
- 2 tblspnsGarlicminced
- 2 tblspnsCeleryfinely chopped
- 2 tblspnsLemon Juice
- 1Green Pepperchopped
- 2Zucchini Squashfinely chopped small
Instructions
Combine ingredients. Season to taste with salt and pepper. Chill thoroughly. Serve with lemon wedges. Makes 6 to 8 servings.
