Oven-Roasted Green Beans W/Pasta

Ingredients

  • 2 lbs.French-Cut Green Beansfresh or thawed frozen
  • 4 clovesGarlicminced
  • 2/3 cupShallots(about 3) thinly sliced
  • 3 tbspns.Olive Or Salad Oil
  • 2 tspns.Thyme Leaves (Optional)fresh
  • 2 1/2 tbspnLemon Peelgrated
  • Course Salt (Sea Salt)
  • Pepperfreshly ground
  • 1/3 cupLemon Juice
  • 1 lb.Fettuccinecooked, dried
  • 1/2 cupParmesan Cheese(2 oz.) thinly shaved

Instructions

1. If using fresh green beans, trim ends and cut into 2-in lengths. Place beans, garlic and shallots in an 11 by 17-inch roasting pan. Drizzle with oil; sprinkle with thyme and lemon peel. Gently fold ingredients to evenly distribute seasonings. Add salt and pepper to taste. 2.Roast beans in a 450 F oven until edges are browned and beans are slightly blistered and crisp, about 30 minutes; stir after the first 10 minutes. Pour lemon juice evenly over beans; stir to coat. 3. Add beans to hot pasta, stir well to mix and top with parmesan. Serve immediately.
