Bualacchi’s Fettucine Alfredo

Ingredients

  • 1/4 tspnNutmeg
  • 1 cupMilknon-fat
  • 1/2 cupParmesan Cheeselow fat, grated
  • 1/2 tspnOlive Oil
  • 1 tspnMargarine
  • PinchWhite Pepper
  • 1/2 tspnFlour
  • 1/4 tspnWhite Wine
  • 4 ouncesFettucinedried, cooked
  • Optional:
  • 2 tblspnsCarrotsdiced, blanched
  • 2 tblspnsBroccolichopped, blanched
  • 1 tblspnPeas
  • 2 tblspnsMushrooms

Instructions

Melt margarine in saucepan. Add optional vegetables which have been sauteed. Add milk, olive oil, pepper and nutmeg. Heat. Slowly, while stirring, add flour. Continue stirring and add white wine, Parmesan cheese and vegetables, if desired. Heat until thick. Pour over boiled fettucini noodles.
