Fry bacon until it is slightly soft, not too crispy. Leave grease in the pan to cook the onions and apples.
Peel and chop a white or sweet yellow onion. This is optional, but it adds bulk to the dish in a nice way. Next, chop about one apple per person since they will cook down, into either thin slices or dice.
Lightly saute the onions until golden and translucent in the bacon grease, then add the apples. At this point, throw in something sweet and savory to the dish; for four apples, add about 2 teaspoons of our desired sweetener and a tablespoon of fresh herbs, such as thyme leaves. Place a lid over the pan so that everything steams together. Cook until soft, around 15 minutes.
Finish by mixing in the bacon and adding a dash of salt.
