Asian Rotisserie Chicken Salad w/dressing

Ingredients

  • 2 cupscilantrofresh
  • 1/4 cuplime (2 limes)fresh
  • 1/4 cupvegetable oil
  • saltcoarse
  • pepperground
  • 1chickenrotisserie (about 2 1/2lbs)
  • 1/4 medred cabbage8 oz. cored and thickly cut
  • 1red bell pepperribs & seeds removed, thinly sliced
  • 2scallionsthinly sliced
  • 1 large headromaine lettucetorn into bite size pieces
  • 1/2 cupcashews

Instructions

1. Make dressing in a blender, Combine cilantro, lime juice and oil; Season w/salt and pepper. Blend until smooth. 2. In a large bowl, combine chicken, cabbage, bell pepper and scallions, season w/salt & pepper. In another large bowl, toss lettuce w/ 1/2 cup dressing. Divide among four bowls and top w/chicken mixture. Drizzle with remaining dressing and sprinkle w/cashews.
